POSITION OVERVIEW
The Assistant Director of Cocktail Services & Lounges is responsible for executing the strategic vision established by the Executive Director, Beverage, Cocktail, & Lounge Services across all cocktail and lounge venues. This role ensures exceptional guest experience, operational excellence, and financial performance through expert implementation, team leadership, and continuous improvement. The Assistant Director will translate high-level strategies into actionable plans, oversee daily operations, and ensure alignment with organizational goals and brand standards.
ESSENTIAL DUTIES AND RESPONSIBILITIES
The following and other duties may be assigned as necessary:
- Execute strategic initiatives and operational plans as directed by the Executive Director, ensuring alignment with the broader vision
- Oversee all day-to-day cocktail service and lounge operations including marketing initiatives, Member scheduling, training, inventory, cost control, and driving top line revenue
- Ensure consistent implementation of service standards, processes, and methodologies across all venues, in alignment with the Executive Director’s strategic direction Make operational decisions aligned with executive strategy
- Oversee the work performance of cocktail & lounge managers and assign projects that will heighten the beverage service experience
- Responsible for the creation and ongoing monitoring of the department’s scheduling, including the analyzation of scheduling data
- Monitor the department procedures needed to ensure the smooth operations of cocktail services and lounges
- Mentor department managers to develop their skills and leadership abilities, communicating company initiatives and ensuring alignment with strategic goals Regularly obtain feedback from clients and guests to improve operations
- Support the Executive Director in the preparation of the annual budget and marketing plan, taking ownership for the operational execution of cocktail services
- Maintain monthly reporting system to monitor Key Performance Indicators (KPI), operational expenses, project updates, and other related tasks
- Respond and assist in any departmental guest service issues
- Partner with the Executive Director, Beverage, Cocktail, & Lounge Services in executing all menus, promotions, and programs
- Achieve daily sales, cost, and department budget goals
- Partner with the Executive Director, Beverage, Cocktail, & Lounge Services to forecast, implement, and monitor budgets and financial performance
- Oversee completion of required department reports, including daily reports, and compile information at month end closing
- Responsible for knowledge of beverage items and ingredients, functions of service Team Members, house and bar rules and regulations, and alcohol awareness training
- Use all performance management tools to provide guidance and feedback to team to promote a cooperative work climate, maximizing productivity and morale
- Conduct regular scheduled meetings to ensure lines of communication are open between management and Team Members
- Overall responsibility and awareness of beverage cost, comp, voids, spills on a nightly basis. Provide recommendations on increasing efficiencies and reducing costs
- Partners with Sales & Marketing to manage the roll out of the annual promotional schedule and to create additional promotions to improve the profitability and image of the F&B operation
- Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary
QUALIFICATION REQUIREMENTS

- Bachelor’s Degree in Business, Hospitality Management, or related major; or equivalent experience preferred
- Six (6) years of in food and beverage management in a supervisory capacity for a high-volume beverage gaming operation that includes banquets, entertainment, multiple bars and restaurants with a minimum of 2000 slots
- Proven success in leading large-scale beverage programs, including banquets, entertainment venues, and multiple bar concepts
- Expert-level knowledge of cocktail program development, mixology trends, and guest experience design
- Advanced proficiency in financial management, including P&L review, budgeting, and cost control
- Demonstrated ability to lead cross-functional teams, drive strategic initiatives, and deliver measurable business results
- Demonstrated knowledge and experience in overall cocktail & lounge operations
- Must have basic knowledge of Microsoft Office software
- Expert-level knowledge of cocktail program development, mixology trends, and guest experience design Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, statutory requirements regarding health and safety, sanitation, proper chemical usage, fire procedures, and HACCP
- Ability to execute on guidelines for proper staffing to maximize efficiency and minimize labor costs
- Strong overall knowledge of drink menu preparation and presentation
- Proficient in operational financial management accountability and budgeting
- Exceptional interpersonal and communication skills, with the ability to influence and inspire at all levels of the organization Ability to provide leadership and direction contributing to the success of the organization through engaging, developing, and mentoring individuals and teams
- Strong organizational and analytical skills, with the ability to manage multiple priorities under tight deadlines Must be willing and able to work a flexible schedule to include nights and weekends

SUPERVISORY RESPONSIBILITIES
This position supervises all positions with the cocktail services and lounge operations department.

Member must be able to qualify for licenses and permits required by federal, state, and local regulations.
LANGUAGE SKILLS
Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in English may also be required.
