POSITION OVERVIEW
The Master Cook, Pastry Baker is responsible for supporting the Executive Baker in all aspects of food requisitions, managing and training kitchen staff, and supporting the bakers. Responsible for the production of bread and specialty items for outlets, ensuring food quality according to department standards and ensuring the cleanliness and sanitation of work areas and equipment in accordance with health department standards.
ESSENTIAL DUTIES AND RESPONSIBILITIES
The following and other duties may be assigned as necessary:
- Ensure all bread preparation is done in accordance with set procedures and meets quality standards
- Assist the Executive Baker with ensuring the bake shop always meets hotel and state health standards for food preparation
- Review all bread orders submitted to the bake shop and inform the staff of requested products and time frames
- Complete bread inventory and order products to fulfill and maintain par levels
- Update the Bake Shop Culinary management team with the information needed to adequately stock the bake shop with all necessary supplies
- Prepare special orders for VIP customers
- Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary
QUALIFICATION REQUIREMENTS

- 2 years’ experience in a high volume/high quality Breads and Danishes production kitchen, familiar with classic and modern techniques preferred
- Need to be able to assist in creating new menus seasonal and occasional
- Some knowledge in artistic bread showpieces making, creative and passionate
- Bread /Pastry training degree is preferred, but not required
- Candidate must have advanced knowledge of Breads and Danishes making, sanitation and cost control
- Requires the ability to work efficiently and within a team environment
- Knowledge, understanding, and compliance with policies and procedures, statutory requirements regarding health and safety, sanitation, proper chemical usage, fire procedures, and HACCP
- Ability to provide leadership and direction contributing to the success of the organization through engaging, developing, and mentoring individuals and teams
- Must be willing and able to work a flexible schedule to include nights, weekends
- Work in a fast paced, busy, and somewhat stressful environment

Member must be able to qualify for licenses and permits required by federal, state, and local regulations.
LANGUAGE SKILLS
Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in English may also be required.

Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

SALARY
$24.97 per hour
